Damien Pignolet is among Australia’s finest chefs and one of the most important players in the Sydney restaurant scene. Well-known for his signature style and deep passion for perfection, Damien has been behind many successful restaurants including the award-winning Bistro Moncur where he helped established Sydney’s first ‘gastro-pub – The Woollahra Hotel; and Sydney’s dining darling, Claude’s in Woollahra, which he owned for many years. As REGATTA’s Executive Chef, Damien oversees REGATTA’s contemporary European-style menu that guest-stars some of his famous dishes, along with some newer crowd-pleasers. He describes his food as ‘comfortable and approachable – and I trust, delicious’.
